Rama lama lama, ke ding a de dinga a dong

On Thursday night, my husband and I were fortunate enough to go out on a mini-date to the wine and cheese bar down the street. This is something we love to do, but don't do often, because frankly, I can buy an entire bottle of wine cheaper than the single glass of moscato I enjoy there. But...mmm...it is IS good Moscato! As usual when we go there, we get their meat and cheese plate, and a glass or two of wine each. The cheeses and meats vary from one visit to the next, but I never fail to be amazed at how much I LOVE the pairings. This time, we had an herbed soft goat cheese with craisins, a firm 'drunken goat' cheese, marcona almonds, and a cheddar blue cheese drizzled with honey. The meat pairings were a salami, and some prosciutto. The ONLY possible way I could say that the spread would be better is if there had been some melon to go with the prosciutto, but as it was, it was fabulous. Ok, there could have been a LITTLE more bread. But other than that, fabulous. I'm not sure why I am always amazed at what honey does to cheese, but we've had this 3 or 4 times now, and each time I am astounded. This time the cheddar blue cheese also was a big change for me. I LOVE cheddar - it almost can't be too sharp for my taste. At first when they told us it was a cheddar blue, I was bummed, because I don't generally like blue. EXCEPT when there is honey on it! The cheddar blue was stellar, and with the addition of the honey, I seriously could have licked the plate, it was so good. (Imagine that - hoity toity wine bar, and me licking the plate. Hmmmm...no.) It just, in that moment, made me think about my husband and me. We do not always have much in common. We don't always like the same things. In fact, most of what we like to do recreationally is polar opposite. But I guess I'm the cheddar (because I love cheddar), and he's the blue (because he LOVES stinky blue cheese), and together, we are something better than we would be on our own. And the sweet honey? Our relationship with God. That topping....well, really, when you dig into it, the honey went all the way through that cheese...and I guess that's how God is with us! Soooooooooooooo.... IT'S CHEESY (har har...see what I did there) but true! We go together like peas and carrots, taters and ham, biscuits and gravy....me and him!
